33 0.50 Proper cooling methods used; adequate equipment for temperature control Yes No No 3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed three (3) pans of TCS food (cooked cabbage pans, one pan of Mac and cheese) cooling in WIC. Cabbage pans were observed cooling at effective rate; however, Mac and cheese was observed cooling at insufficient rate due to plastic wrap covering. CDI - PIC removed cover and rotated Mac and cheese to blast chiller to achieve proper cooling rate prior to expiration of 2 hour window. EHS provided cooling chart; heat treated TCS foods are to be cooled effectively within 6 hour time window. Utilize freezers, blast chillers, etc. as needed.
