4-301.11 Provide equipment in number and capacity so that cooling, heating, and holding temperatures are achieved. -Pf Observed large pot of menudo hot holding on open air burner attached to a propane tank inside mobile food unit. PIC states menudo was cooked at the commissary and the burner is used to keep it hot. CDI, burner and propane tank removed. EHS discussed with PIC regarding adding hot holding equipment to mobile food unit. Advised PIC to notify EHS before adding equipment.
