Observed all items in prep cooler and low boy out of cold holding temperature such as tuna salad, chicken salad, egg salad, and black beans. Internal thermometer reading of prep cooler and low boy read 48F. PIC provided a temperature log of the cooler which was last temped at 5am this morning with a temperature of 40F. PIC removed all TCS items from prep cooler and low boy and relocated them into the walk in cooler for rapid cooling. VR-A verification visit will be conducted within 3 days to insure the unit maintains an internal thermometer reading below 41F and no TCS foods will be stored in the cooler until the unit is maintaining 41F or below.
