General CommentsEHS observed raw shell eggs and buttermilk on prep top at 65F for baked goods recipe which calls for room temperature ingredients. EHS advises PIC to add eggs and milk to TPHC procedures and label items for time to ensure they do not rise above 70F or sit out of temperature control for more than 6 hours. EHS advises the PIC to set out only the quantity needed, as TCS ingredients remaining unused may not be cooled, and must be discarded.
