3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P
Observed a few items past discard date due to improper date marking. Sliced melons and liquid eggs were date marked for 8 days. 7 days were being added past prep date instead of 6 days (prep date counting as day 1). Discussed date marking procedures with PIC. All other products were properly date marked. CDI-PIC discarded items past discard date.
