3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed gravy in walk in cooler with a prep date mark of 2/20. Observed pizza sauce with a discard date of 3/4 in walk in cooler. CDI - PIC stated that date mark on gravy was incorrect. Date mark was corrected with date of preparation. Pizza sauce was discarded. -1.5 points-
