3-501.14(A) Quickly cool cooked foods within 2 hours from 135F to 70F; and within a total of 6 hours from 135F to 41F. -P. Observed 12 plastic containers of TCS foods (collards, cabbage, pintos, navy beans, mac and cheese) all above 41 (43-45F), made from yesterday. They were in large plastic containers, covered and there were small bags of melted ice inside. EHS has observed this process not working before. PIC explained they do prep on Mondays to get them prepared for the week. CDI-PIC voluntarily discarded all TCS foods. They said they are going to remove plastic containers and only use metal for the future. VR REQUIRED 8/12/2022. REPEAT. |
