PIC stated tomatoes recently arrived to facility and were prepared. Quickly cool foods. Use open/vented shallow pans, large ice baths, and active stirring methods. Cold air must flow around the product to remove the heat. CDI Sliced tomatoes were removed from unit and placed into another container to be cooled inside of the walk-in cooler.

Plug holes in wall above three-compartment sink where equipment was previously mounted. Repair baseboard under back hand sink. Physical facilities shall be maintained in good repair.
