3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed seveal TCS foods being held above 41F in display case. PIC stated products were placed in unit 11/22/20. PIC contacted serviceman to repair unit- arrived during inspection. Facility going to discontinue use of display case until unit repaired, utilizing small make table with smaller portions of meat instead. EHS will follow-up within 10 days to verify unit is properly working. PIC agreed to keep in contact with EHS daily to notify of temperatures. CDI: PIC voluntarily discarded products. REPEAT VIOLATION. VERIFICATION REQUIRED. |
