3-501.19 Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. -P/Pf Observed mozzarella held at room temp on TPHC procedure without time stamp or TPHC written procedure. CDI - PIC sent form and notification to PIC Veronica to have available for all future inspections. Per PIC this item is held out of temperature control for no more than 2 hours. PIC states any food left at end of service is given away. EHS advised PIC to make sure time accurately reflects the time food is out of temperature. -1- |
