General CommentsEHS completed inspection to follow up on complaint about inspections not being conducted properly. Establishment celebrated Cinco de Mayo yesterday. EHS provided an in-service to food employees about risk factors found during the inspection. EHS also provided them with QR link to Food Safety Training PowerPoint. EHS recommends reviewing final cook temps, hand washing procedures, how to use gloves, and cleaning and sanitizing. EHS recommends developing a SOP for Datemarking. EHS observed two different ways dates were being written for date marking TCS foods. Establishment grows their own mint used in alcoholic beverages. They must wash mint in produce sink before using. CDI-Food had no evidence of contamination and food was relocated to correct shelf. 3-304.15 (A) Gloves, Use Limitation (P) Observed several food employees not changing gloves in between tasks. Gloves shall be used for only one task such as working with RTE food or with raw animal food, used for no other purpose, and discarded when damaged, soiled or when interruptions occur in the operation. Food employee ensure rice was cooked to 205F to ensure there was no contamination.

No evidence of contamination to food was observed. Repair/replace unit. 3-305.11 Food Storage - Preventing Contamination from the Premises (C) Observed multiple open trash bags of tortilla chips stored in open cardboard boxes stored on the floor in the dry storage room. Also observed several bags of opened food with tops rolled down stored on the shelf in the dry storage room and multiple containers of uncovered food in the walk-in freezer and the low two door reach-in freezer. Opened food must be stored in a manner such as in a zip lock bag, in a container with a tight-fitting lid, or covered, and at least 6 inches off the floor to keep food protected from contamination. CDI-food was stored properly to prevent contamination.
