The metal ice scoop (used for dispensing ice from the kitchen’s bulk ice machine) was being stored inside of a plastic bowl with residue on the inside of it. During pauses in food preparation or dispensing, food preparation or dispensing utensils shall be stored in a clean, protected location if the utensil is used for non-TCS foods such as ice. The manager removed both the ice scoop and bowl for cleaning during the inspection. CDI |
