5-402.11 Backflow Prevention - P; The 3 compartment ware washing sink and the 2 compartment food prep sink do not have an air gap between the outlet piping and the drain. A direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, and utensils are placed. Facility was built prior to 2012. If the kitchen is ever remodeled, and air gap will need to be added for these sinks. R |
