Sliced cheese and pizza sauce was observed in the prep unit without a prep or discard date on them. The PIC stated that his staff started prepping food earlier today. EHS reminded that PIC that once food is opened and/or prepped, an open or discard date has to be placed on the items for no more than 7 days. The PIC has a staff member date those items. CDI |
