3-501.13 Potentially hazardous food shall be thawed at a water temperature of 70F or below, under refrigeration, as part of the cooking process, or in a microwave oven and immediately transferred to cooking equipment.
A container of smoked sausage was observed thawed under hot running water. The employee stated that the sausage was frozen and that he was not aware that food can't be thawed with hot water. The manager removed the container of sausage and placed in the walk in freezer to rapidly cool down. EHS reminded the employee that all frozen food should be thawed by slacking out in the walk in cooler. CDI |
