General CommentsCooling mashed potatoes had a necessary cooling rate of .333 and an observed cooling rate of .866 making them cooling in compliance. Several of the back reach in coolers were being filled with frozen foods from delivery this morning during the time of inspection. No foods were open and the food received was, based on temperature of turkey wings, and visually, frozen. No temperatures taken in these refrigerators.

Otherwise through the facility date marking for foods held longer than 24hrs was being completed properly. Keep the premises free of insects, rodents, and other pests. PIC was able to show EHS their most recent pest control invoice from May 30th. In-use wiping cloths shall be maintained at an appropriate sanitizer solution 50-200ppm for chlorine sanitizers. PIC remade the bucket and the sanitizer tested 200ppm. CDI

Use a distinct separate water rinse after washing and before sanitizing if using a 3 comp sink. No dishes were being done at the time of the inspection, EHS explained that the dishes require a rinse step for the sanitizer to function properly. CDI
