Turkey wings and pig feet stored in the same cooler had dripping residue of the collective foods pooling on the bottom of the fridge. The bottom of the boxes were touching the pooled residue from the foods so that a cross contamination point was noted. Food shall be protected from cross contamination by separation, during storage, preparation, holding, and display. Macaroni and cheese in the kitchen reach in cooler had no date on it. Date mark all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. Macaroni and cheese was voluntarily discarded by PIC during the inspection. Otherwise through the facility date marking for foods held longer than 24hrs was being completed properly. When asking how the facility washes their dishes the PIC explained that the 1st basin of the 3comp sink was used for washing and the 2nd basin was used for sanitizing omitting the rinse step. Use a distinct separate water rinse after washing and before sanitizing if using a 3 comp sink. No dishes were being done at the time of the inspection, EHS explained that the dishes require a rinse step for the sanitizer to function properly. CDI |
