An open jug of milk was observed in the low reach in cooler of the prep unit without an open or discard date. The PIC stated that she didn't know that milk has to be date marked because it has a manufacturers date on it. EHS explained that once the milk is opened, it should be dated for no more than 7 days. Upon entering the restaurant, EHS observed the kitchen staff rushing to put on their hair visors that are used as head coverings. EHS reminded the PIC that hair restraints are to be worn at all times while they are working with and preparing food. CDI |
