A couple of opened bags of sliced pepperoni were being stored inside of the walk-in cooler with no date marking labeling on them. Refrigerated, ready-to-eat, time/temperature control for safety foods that are prepared and packaged by a food processing plant shall be clearly marked with the date that the food is to be sold, consumed on the premises, or discarded when opened and held for over 24 hours at 41F. Soiled metal bread baking sheets were being stored above boxes of single-use, bread packaging bags at the corner set of racks inside of the bakery. Single-use items shall be stored where they are not exposed to splash, dust, or other contamination.
