2-301.14 When to Wash (P)
A food employee was observed placing raw shrimp onto the grill and proceeded to change out the latex gloves that he was wearing without washing his hands in between. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation (including working with exposed food, clean equipment/utensils, and unwrapped single-use items) and during food preparation (as often as necessary) to remove soil and contamination and to prevent cross contamination when changing tasks. The manager had the employee change out his gloves and wash his hands during the inspection. CDI |

4-301.13 Drainboards (C)
A couple of dirty metal food pans were being stored on the floor in front of the 3-compartment sink. Drainboards, utensil racks, or tables large enough to separately accommodate all soiled and cleaned items that may accumulate during hours of operation shall be provided for necessary utensil holding before cleaning and after sanitizing. The manager had an employee relocate the dirty food pans off of the floor during the inspection. CDI |

One of the lids to the restaurant's outside dumpster is caved in and need replacing. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight-fitting lids or doors if kept outside of the food establishment. |

6-303.11 Intensity - Lighting (C)
Brighter lighting is needed beneath the kitchen hood system (above the kitchen grill) as well as above the kitchen food prep table. The lighting at the grill was 43 ft/c, and the lighting above the table was 40 ft/c. The lighting intensity shall be a minimum of 50 f/c (foot-candles) above surfaces where employees work with food or with equipment/utensils used by employees to prepare food. |
