A food employee, wearing plastic gloves, was observed taking out the trash then proceeding to work with clean dishware. If used, single-use gloves shall be used only for one task, used for no other purpose, and discarded when damaged or soiled or when interruptions occur during the operation. EHS educated the employee that working with contaminated gloves then touching clean dishware is a point of cross contamination. Employee washed hands and changed gloves. CDI |

A significant portion of foods were not date marked at the start of today's inspection ,including open red hot hot dogs, open sausages, open deli meat. Wet wiping cloths (not in active use) were being stored inside of bleach sanitizer solution buckets with a chlorine concentration of 0 ppm. Cloths in-use for wiping counters and other equipment surfaces shall be held in chemical sanitizer solution at the required concentration range. For chlorine/bleach-based sanitizers, the concentration range is 50 to 200 ppm. Bleach solution was remade during the inspection and measured 50ppm. CDI |

Condensation was observed falling from the walk-in cooler's compressor during today's inspection. Equipment shall be maintained in a state of good repair.
4-101.19 Nonfood-contact surfaces
Wire racks in the walk-in cooler are showing signs of rusting and either need refinishing or replacing. Cardboard boxes are being used to absorb the condensation from the leaking walk-in cooler. Nonfood contact surfaces of equipment that are exposed to splash or spillage that require frequent cleaning shall be constructed of corrosion-resistant, nonabsorbent, and smooth material. |

4-601.11 Nonfood contact surfaces cleaning
Bottom portion of the reach in freezer had food debris and needs some cleaning. Interior portion of the microwave had soil accumulation and needed some cleaning. The interior portion of their countertop oven had accumulations of grease and needed some cleaning. The exhaust of the equipment contains dust accumulations and could use some cleaning. Fans being used in the kitchen are showing accumulations of dust and food residue and could use some cleaning. Non-food contact surfaces and utensils shall be clean to sight and touch. |

5-501.113 Covering Receptacles (C)
The lid for one of the outside dumpsters was found open today. Outdoor receptacles shall be equipped with tight fitting coverings. Repeat.
5-501.114 Using Drain Plugs.
No drain plug was present in one of the dumpsters during today’s inspection. Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place. EHS recommends having the establishment reach out to their waste services provider to have drain plugs put in. Repeat
5-501.11 Outdoor Storage Surface.
Both the outdoor dumpsters and the outdoor grease receptacle are being stored on grass/dirt. An outdoor storage surface for refuse, recyclables, and returnables shall be constructed of nonabsorbent material such as concrete or asphalt and shall be smooth, durable, and sloped to drain. EHS recommends contacting the servicing company and having them move the receptacles to the pavement. |

Walls throughout the facility are showing an accumulation of grease buildup and could use some cleaning, areas of the flooring between equipment could use a little bit of cleaning. Physical facilities shall be cleaned as often as necessary to keep them clean. |
