General CommentsEHS and PIC discussed sous vide egg procedure. Occasionally eggs are cooked and then cooled. EHS advised that pasteurized eggs must be used or the eggs must be held on TPHC from the time they enter the water bath for no more than 4 hours. EHS provided PIC with a non-continuous cooking application today via email for the banquet kitchen. EHS suggested adding ice at around 135F in the cooling process as the “water” for the stock to assist in cooling.
