General Comments

EHS arrived for unannounced inspection at 11:35 a.m. At that time, limited staff were available within the kitchen and no food prep was observed. PIC and food employee elaborated that seasonal hours for the establishment had changed; facility and associated food establishment have hours of operation starting at 1 p.m. As elaborated by conversation with PIC and food employee, facility is not currently utilizing hot holding or TPHC for their products; due to limited customers due to lessened seasonal operation, most food items prepared within the establishment are prepared for immediate service using convection and conveyor ovens. Facility equipment was observed to be functional and in good condition and procedures have been detailed fully, should hot holding or TPHC of food items be required and reinstated.
