General CommentsEHS explained to PIC that their permit only allows for cooking and cooling of 3 tcs foods. They do not have a WIC and only one reach in freezer. EHS advised PIC that observing cooling/cold holding violations today is an indication that they do not have the capacity to properly cook and cool more than 3 tcs foods. EHS presented the following options to the PIC: 1. Installing a WIC or purchasing a Blast chiller and requesting that the permit be amended to a category 4 2. Revising menu so that small quantities can be cooked EHS also advised PIC that if they are offering a public restroom, to remove food and clean pots and pans from the hall way leading to the bathroom. Facility stated that they tried selling the boiled peanuts and have decided to discontinue selling them. EHS emailed PIC the flyer for the Spanish Food safety class.
