3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P
Observed multiple TCS food items cold holding above 41F in the standing reach-in cooler. Food employee stated he was constantly in and out of this reach-in cooler moments prior to EHS's arrival. EHS observed ambient air temp of the cooler was 50F, and had dropped to 48F after 25 minutes.
PIC moved all TCS food items into the WIF to rapidly cool food items down, as these items are not held in this cold holding unit overnight and TCS food items were moved into this unit less than 4 hours prior.
VERIFICATION REQUIRED within 3 days to ensure facility is in compliance.

3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it has not been labeled, or if the label is incorrect. -P The PIC should train and assign staff to monitor date marking to prevent the use of food products that are no longer in compliance with 3-501.17 (A), (B), or (C)
Observed pan of seared tuna dated with prep date of 1/11, stored in make table 1. PIC stated this is incorrect and was actually prepared on 1/19.
CDI: PIC created new date label with correct date of prep.
Observed deli container of house-made chimichurri sauce (made with roasted garlic) dated with prep date of 1/10.
CDI: PIC voluntarily discarded since sauce had surpassed 7-day window.
REPEAT VIOLATION.
*Note: Although a repeat violation, EHS not deducting full points today since only two TCS food items were observed out for date-marking procedures, which is a great improvement since previous inspection. If observed as a repeat violation during next routine inspection, then EHS will deduct full points.
