General CommentsInspection conducted at 7225 Statesville rd in gravel lot. PIC stated MFU intends to be here Fri-Sat from 12-4p depending on business. EHS asked PIC about washing vegetables and PIC stated that vegetables are washed in small sink on MFU. EHS educated PIC that this sink is intended for cleaning as a 1-comp sink as MFU doesn’t have a 3-comp sink and that fruits and vegetables should all be prepared/washed in commissary and brought onto MFU in a RTE form per permit conditions. EHS educated PIC on ensuring that the majority of the prep is done at commissary, including portioning sauces. Prep should be limited on MFU due to very limited space and refrigeration.
