The food shall be discarded after the food has completed its 4 hour hold time, if the food is in unmarked containers, or marked with a time that exceeds the 4 hour time limit. -P Observed shredded cheese, cold bar items, cream cheese, milk and butter not labeled for 4-hour discard time. Some of these items were not listed on the TPHC procedure. One employee stated that they put shredded cheese, butter and cream cheeses back in the cooler after breakfast service. CDI - EHS worked with management to update the TPHC procedure and they will now keep a log for all items on TPHC. Items will be discarded after the 4-hour breakfast service. |
