Employee beverages should be covered with a lid and stored in a manor that wont pose a cross contamination risk to exposed food, clean food contact surfaces, or single use or single service articles.
19 1.50 Proper reheating procedures for hot holding Yes No No 3-403.11 Reheating for Hot Holding (P) - EHS observed fully cooked chicken patties and fully cooked beef burger coming out of the oven after being reheated for hot holding at 109 and 79 degrees F respectively. Staff showed EHS that they have preset buttons to press depending on the food item being reheated. PIC said they just had an update this week for the unit. When reheating fully cooked food from the manufacturer for hot holding, the internal temperature must be 135 degrees F or hotter. CDI: Staff ran the food products a 2nd time and achieved above 165 degrees F. PIC has placed a maintenance request to service the oven. EHS suggests taking food temperatures of food items to make sure they are at least 135 degrees F or higher before placing items in hot holding.
