4-901.11 Air dry equipment and utensils after cleaning and sanitizing.
-EHS observed dishes being stacked before allowed to fully air dry. Dishes are to be air dried before stacking to allow sanitizer to sanitize. The main area this was seen was the rack that holds the stainless pans. Store angled on racks to allow water to fully drip off. |

-EHS observed the gasket on the hot cabinet being damaged. Replace damaged gasket to ensure heat is retained. |
