4-501.11 Equipment shall be maintained in good repair. Repair issue causing ice to form on the pipe under the condenser in the walk-in freezer. Ice is forming on the racks and boxes under the drip. There is no way of knowing what is in the ice. Because of this, if ice is forming on boxes wherefood is being stored points for number 39 can be taken for miscellaneous sources of contamination which could be 1 point deduction. To help prevent this from happening, EHS strongly recommends placing a pan under the condenser to catch ice. Rotate the pans out when ice is full. Today EHS is not taking points for 39. Today is a warning. Next inspection if ice is seen on boxes points will have to be taken for 39. |

Clean boxes up and other trash from about the bottom of the dumpster furthest from cafeteria entrance. No points taken today but points will be taken in the future if seen again. |

6-501.12 Physical facilities shall be cleaned as often as necessary to keep them clean. Clean wall and floor behind and next to the washer and dryer. Clean ceiling vents where dusty throughout. Clean floors under racks in refrigerator and in dry good storage.
6-501.114 The establishment must keep its premises free of materials that are not necessary for the establishment's operation or maintenance, such as litter or nonfunctional or no longer used equipment. Remove the hot cabinet that has a hole in the middle of the unit and no longer works properly. Manager said they no longer use it because it has issues keeping food hot. EHS speculates the hole in the middle of the front of the unit is the reason it is not holding temperature. |
