6-501.12 Physical facilities shall be cleaned as often as necessary to keep them clean. Clean floors behind the cooking line. Clean floor behind the door in the can wash room.
6-501.114 The establishment must keep its premises free of materials that are not necessary for the establishment's operation or maintenance, such as litter or nonfunctional or no longer used equipment. Remove any unused equipment in the kitchen. There is an old griddle next to the steamer that is rusting badly. This is not being used per manager. This is a note written on the griddle that say being removed. Will have to continue to mark until removed. |
