6-404.11 Designate a separate area for items not for use and are being held for credit, such as dented cans or recalled products. Pf. EHS found a badly dented can of green beans sitting on the shelf with other good cans. The can was dented along the side seam and had sharp edges. Pay close attention to cans when putting them away to ensure they are not dented along the top and bottom rim and the side seam. Also check to see if any edges of the dent is sharp. If any of those things occur, do not use the can and either separate the can from other cans, label the area as dented, and send it back to the company or discard the can. If the can is accidentally dropped by an employee, go ahead and open the can and use it or place the food into a new container and date with the day opened. Either use food item within 7 days or freeze the food. Can was pulled and discarded by manager during the inspection. |

3-304.14 Hold in-use wiping cloths in sanitizer between uses and laundry daily. EHS found a bucket of sanitizer at 0ppm. The quat sanitizer must be maintained at 200-400ppm. Sanitizer was remade to 400ppm during the inspection. CDI |
