(Cheese 41.9, milk 41.9, and ranch 41.9). The air temperature in the cooler felt warmer than normal. Due to that, EHS checked air temperature of the unit and the air was blowing out at 49-50F. EHS made the manager aware and manager called person who puts work orders in and made them aware. EHS and manager went into the unit about 30 minutes later and used their thermometer and our thermometer and checked food temperatures. The cheese had gone up to 43F, the ranch had gone up to 43F. Air temperature was blowing out at 49F still. Establishment does not have any other refrigeration to move the food too. Manager contacted person in charge for maintenance again to see if they could move food to another school. Maintenance came during the inspection to repair the unit. EHS strongly suggested placing food needed for today on to TPHC and discard after 4 hours since they do not have another cooler to put food in or place food on ice to maintain food at 41F. Maintenance came during the inspection and did something to the unit. Within 30 minutes the air temperature had dropped down to 38F. Air blowing out of the fan was 36F. EHS is unsure when temperature started rising and because temperature did rise above 41F during the inspection EHS has to take points. CDI by repair. EHS suggested placing a bottle of water in the unit and label it as for temperature only. Use the bottle of water to check the refrigerator temperature. This will give a more accurate reading because it will read more like what the food would be holding.

Repair issue causing ice to form on the black pipe under the condenser in the walk-in freezer. Walk-in cooler was holding an air temperature of 49-50F and food went up to 43F during the inspection. Unit was not working properly but maintenance did fix unit during the inspection. Air temperature dropped down to 38F during inspection. Replace the torn gasket on the bottom door of the milk box at the left hinge.
