-EHS observed large accumulations of grease baked onto the pizza pans. Ensure these pans are being thoroughly scrubbed to eliminate as much build up as possible during wash rinse and sanitize cycles. Focus on the pans where grease is beginning to crack as these pieces could potentially flake off into food.

-EHS observed the storage rack for clean dishes with an accumulation of grease on the rack itself. Clean rack frequently enough to prevent build up. |
