3-304.14 Wiping Cloths, Use Limitations (C)- Observed wet wiping cloths being stored at the coffee machines that had visible milk residue in the sanitizer solution and the concentration of the quat solution was between 100-200ppm. Observed one at the second coffee machine with no visible milk residue that measured below 100ppm. Staff stated they placed a dry cloth into the sanitizer solution. Educated on saturating the wiping cloths prior to placing in the sanitizer trays. Recommended increasing the concnetration of the sanitizer being mixed at the 3-bay to closer to 300ppm to be able to handle usage. CDI- Staff made fresh sanitizer solutions. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration that meets manufacturer's specified concentration and shall be free of food debris. |
