Observed fan near stove area with dust build up, walls/ceilings throughout kitchen with dust build up from 8 feet above the ground and higher, and some areas of walls near mop sink with build up and food spatter. Ensure more frequent cleaning of hard to reach areas. 6-101.11/6-201.11 Floors, walls and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. Floors shall be non-absorbent in areas subject to moisture. Observed ceiling above sub prep station is damaged and drywall is chipping. PIC stated that they are looking into covering this area with stainless steel due to the bread toaster affecting the ceiling area from heat damage.
