3-501.13 Use approved thawing methods. Observed frozen shrimp thawing in a prep sink with no water running over product, and no other temperature control present. PIC placed the items back into the walk in cooler to thaw in lieu of running cold water over the product. Thawing methods such as thawing in refrigeration, thawing during the cooking process, or having cold, running water over the product allow the product to thaw evenly and not overheat.
Items were still below 32F at time of observation. |
