| 12/8/2025 | | Final Score @ Grade | | | During inspection, observed two items of concern:
Cooked beef bones with no date mark. Follow up questions revealed that the bones were later used for broth. The broth was then labeled with the day of preparation of the broth, not the date of when the beef bones were prepared. Broth needs to bare the date of the oldest cooked item, in this case is the cooked bones. From that day the expiration date is plus 6 more days to total 7 days. If the bones are placed in the freezer, which stops time, then when they are used in the future both the date of prep, plus that date removed from the freezer needs to be included on the sticker. 5 days would then be added to total 7 days (day of preparation for the beef bones and placed in freezer, date of pull and preparation of broth, plus 5 days total 7 days)
Observed baked beans which includes beef brisket. The date mark of the beans was the date of the preparation, not preparation of brisket. Expiration date was correct bc brisket was prepared 2 days prior according to PIC. Per facility poster protocol, brisket has three days before discard, and beans have 5 days before discard. Going forward, the correct date of preparation has to be placed on all TCS items, the correct date is the date of preparation of the oldest prepared item. In the case of the beans, the correct date is the date of preparation of the brisket. |
