General Comments

Blue cheese stuffed olives were observed being held on olive bar at 47F. PIC did not have a variance approval letter from the state of NC, however PIC showed a spreadsheet from Whole foods global research team that their blue cheese stuffed olives are not TCS due to low PH level, less than 4.2. After EHS discussion with Supervisor, blue cheese stuffed olives will be approved as non TCS. Discussed W/R/S procedures with employee in regards to cleaning procedures for cheese grater. Employee stated grater is cleaned in place, however it is not sanitized. Discussed with employee and PIC on requirement to sanitize all food contact equipment and utensils.
