3-401.11 Cook raw animal foods to required temperatures. Do not interrupt the cooking process without approved procedures. -P. Observed 2 different batches of fried chicken with XL chicken breasts not meet 165F FCT. Both times chicken was put back for more cooking, both times not all chicken met 165F. Let rest in warming unit for 5 minutes, one batch all >165F one batch <165F. After 10 minutes chicken just over 165F.
Campero’s SOP is to put chicken in warming unit for 5 minutes to rest before checking temps. A solution for ensuring the XL breasts meet FCT of 165F minimum is needed since both batches had extra cooking which is not part of the SOP. CDI-no chicken <165F was served. Verification Required |
