4-301.11 Provide equipment in number and capacity so that cooling, heating, and holding temperatures are achieved. -Pf Observed two (2) TCS food items (almond milk, oat milk) cooling at minimal rate in dairy RIC. Ambient temperature of unit was approximately 40F. All other TCS food items, held for extended cold holding, were observed at 41F or below. EHS advises recalibration and/or maintenance of cooler to verify its effectiveness for cooling TCS foods from ambient temperature production. A verification will occur no later than 08/05/2024 |
