3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed tri-peppers, chopped turkey, corn and bean salsa, and chopped ham in salad flip cooler above 41F (see temperature chart). PIC stated that items were pulled from walk in cooler within the hour and due to the lid being left up near the oven the items could have gone out of temperature. CDI- All items were pulled and placed in walk in freezer for rapid cooling.
