3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed several prepared items (deli meats, cheeses, etc) being cooled by placing products over a bed of ice rather than in a proper ice bath. As a result the items did not cool properly, as the ice bed does not affect heat transfer in the same way as an ice bath. CDI: EHS showed employees how to make a proper ice bath that immerses the product and allows it to cool evenly in a rapid manner. All items that were insufficiently cooled were vented and unstacked to facilitate rapid cooling until they could all be properly placed in ice baths. All products had been out of tempersture for less than 90 minutes and were allowed to cool within the four hour parameter. REPEAT. |
