General Comments

The person in charge states she’s having an issue with people coming in the rear door and walking through the kitchen to use the kitchen restroom during operating and non-operating hours. 2-103.11(b) in the North Carolina Food Code Manual states: PERSONS unnecessary to the FOOD ESTABLISHMENT operation are not allowed in the FOOD preparation, FOOD storage, or WAREWASHING areas, except that brief visits and tours may be authorized by the PERSON IN CHARGE if steps are taken to ensure that exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES are protected from contamination; Pf The presence of persons unnecessary to the food establishment operation is a Priority Foundation violation & could result in the deduction of points from the overall sanitation score. Food shall be protected at all times, including when food employees are not in the establishment. Appropriate steps should be taken to ensure non-food employees do not have access to the kitchen and/or kitchen restroom.
