A) The PERSON IN CHARGE shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM.
No one on staff at time of inspection had a food protection manager certificate. At least one person working shall have a “Manager” food protection certification. |

6-501.11 Repairing - Premises, Structures, Attachments, and Fixtures - Methods (C) Several ceiling tiles throughout show signs of significant water damage. The one tile in the prep area was replaced with an acoustic tile. Discussed with PIC that all areas subject to splash and or grease vapor shall be of the smooth, coated type. PIC stated he was aware, but is unable to find them at the moment. So to prevent contamination, he elected to replace with an acoustic tile until proper tiles can be found. Explained the smooth tile only needs to be in the prep areas; dry storage and dining can have acoustic. Replace the tiles in dry storage and dining. R |
