Noted a pan of taco meat that had been removed from freezer yesterday without a date. PIC dated it for yesterday to account for the prep date.

Facility is disposing of all TCS items that go on the breakfast buffet at the end of the 2.5 hr serving period. The only exception are the items that are held in the mini-refrig. Currently, there are only written procedures for sausage. Corrected by providing both a hot TPHC and cold TPHC procedure that should be either posted or made available to employees.

Noted melons cooling in a bulk container that did not meet the time parameters. Corrected by spreading out in a shallow sheet pan and it got down to proper temp in another 45 minutes.

Cleaning is needed of the floor under mat in walk-in freezer and floor under fryers. 6-501.114 Maintaining Premises, Unnecessary Items and Litter (C) - The premises shall be free of items that are unnecessary to the operation or maintenance of the establishment such as equipment that is nonfunctional or no longer used, and litter. Work to remove large items/equipment in dumpster area.
