General CommentsEHS observed items actively cooling that were prepared this morning by morning prep shift. When EHS asked PIC on duty, how long items had been cooling, PIC was unable to give an exact answer. EHS strongly encourages facility to maintain a cooling log and/or document on the cooling item(s) the time and temperature when cooling starts. This information should be passed on from the prep shift to the evening shift person. EHS provided handwashing sign and updated V&D procedures in Spanish. EHS provided flyer for upcoming food safety training.
