General CommentsEHS observes front grab and cooler to be potentially inadequate for holding TCS foods; in the path of direct sunlight, even with ambient air at 38F RTE items may rise above 41F in the warmer months. PIC is advised to have kitchen staff check temperatures at the grab and go routinely throughout the day, not stack RTE items in rows, and prepare an alternate method for holding these self-serve TCS foods should it become necessary. If open-face grab and go fails to hold items at <41F, PIC is advised to relocate items to small RIC's.
