4-501.12 Resurface or replace cutting surfaces that can no longer be effectively cleaned and sanitized. Observed cutting boards to be fairly scarred. Have these professionally re-surfaced so that cutting surface is smooth and easily cleanable, or have these replaced.
4-501.11 Maintain equipment in good repair. Observed door for dish machine unable to remain closed, so dish machine cannot be used. Need to have dish machine repaired. 3-compartment sink is large and capable of handling utensil washing and sanitizing can take place until dish machine is repaired. |
