3-302.11(A) Separate the different types of raw animal foods. -P Observed a couple instances of raw ground beef stored above raw pork on speed rack in raw meat walk in cooler. CDI- Food arranged by final cook temperature. Observed raw fish stored next to raw turkey with an ineffective divider separating them, still susceptible to cross contamination from turkey juices going under the divider into the ice. CDI- Fish placed in a large pan to prevent potential cross contamination. |
