General CommentsUnannounced inspection. Improvements observed since last inspection. Bleach sanitizer for dishmachine 50 PPM. Quat sanitizer 200 PPM for sanitizer buckets. Hot water at bleach dish machine 141F. Raw salmon is not wild caught. Bar was not inspected as no food is being prepared in area. PIC demonstrated food safety knowledge. Food service permit reviewed during inspection. Establishment has around 88 seats total including outside seating. Emails, phone numbers, hours, water, sewer, menu, food service equipment, food service equipment layout and food processes remain the same. Food source: Performance Foods, US Foods and local grocery stores. Consumer advisory provided for yellowfin tuna, salmon, burgers and steak. REHS recommends prep sinks be labeled for intended use (ie. vegetable prep sink, etc. ) . Brunch & lunch menu needs some clarification for: 1. Avocado toast has 2 eggs (over easy) is cooked to a minimum of 145F per PIC; if not, menu needs to be updated with 3 asterisks to refer back to consumer advisory or switch to pasteurized eggs 2.Country eggs benedict with Hollandaise sauce and 2 poached eggs (available on weekends only) must be made with pasteurized eggs per PIC; if not, menu needs to be updated with 3 asterisks to refer back to consumer advisory. PIC is welcome to email new menus for REHS to review for approval prior to making new menu's. It is very important to discuss employee health reporting requirements with food service staff often to help prevent food borne illness. REHS discussed employee health policy in detail with PIC and a food employee at random (David). Food employee could not answer symtoms of illness and illnesses questions when asked. Food employees know not to come to work sick but they also need to know the required symtpom and illnesses to report to PIC so the health department is notified. No food employees observed sick during the inspection. Repeat comment.
